Tomato Bean Salad


  • 14 oz. Can of any Small bean, Lentil or Pea, rinsed 3 times to remove 30% of the salt
  • 1 Pepper (yellow or orange, diced)
  • 6 Cherry tomatoes, diced
  • 8 Black olives, pitted and roughly chopped
  • 2 T or Tomato-based pasta sauce or sun dried-tomato sauce OR 1T Pesto
  • Black Pepper to taste
  • Handful Basil Leaves, fresh, torn (optional)



Mix all ingredients together. Taste and adjust the seasoning if necessary.
